Zucchini pasta

30 minutes | Serves 4

When I moved out of my parents house, my mom gave me a hand written recipe book filled with our families recipes. This pasts dish is one among many of the recipe she included. The sauteed zucchini makes a nice side dish on it’s own. Plus you can prepare the zucchini ahead of time and freeze.

1 yellow onion diced
4 tablespoons of olive oil
2 tablespoons of butter
5 or 6 zucchini sliced thinly
1 package of pasta shells
1/4 cup of whipping cream (optional)
1/4 cup grated parmesan cheese
Salt and pepper

In a large frying pan, saute the onion in oil and butter about 5 minutes. Add zucchini and continue to saute for another 20 minutes, stirring frequently. Meanwhile bring pasta water to boil and add pasta. Cook pasta al dente for prespecified time on box, reserving 1 cup of pasta water. Strain pasta 1 minutes before prespecified time and return pasta to frying pan with cooked zucchini to continue cooking. Add whipping cream, parmesan, reserved pasta water, and salt and pepper to pan and allow to return to boil and 2 minutes. Add more parmesean when serving.
