I made a few adjustments to Jenny Rosenstrach’s “A Better Granola” from Bon Appetit’s Feburary 2013 issue. Even though I’m a novice at making granola, I’d confidently say this is perfection.
1 large beaten egg white
1/2 cup agave
1/4 cup olive oil
3 cups old-fahioned oats
1 1/2 cups chopped nuts (almonds, pecans, cashews, walnuts)
1 1/2 unsweetened coconut shavings
1/4 cup seaseme seeds
1 1/2 tablespoon light brown sugar
1/2 tsp salt
1 cup of dried cherries, cranberries, or raisins.
In a large bowl, toss to combine all ingredients except the dried fruit. Spread on rimmed baking sheet and bake for 40-45 minutes, stirring every 10 minutes. Once it’s golden brown, take out of oven and allow to cool so it gets crisp. Mix in dried fruit.
