This is a sweet and savory summer favorite of mine. Depending on your preferences, you can substitute fresh mozzarella and basil for the feta and mint.
4 cups of cubed watermelon, deseeded
2 springs of fresh mint, leaves removed and coarsely chopped
1/2 cup of extra virgin olive oil
1/2 teaspoon sea-salt
1/4 teaspoon pepper
1 pound of fresh feta cheese
Remove watermelon seeds and cut into 1″ cubes. Place cubed watermelon in a medium mixing bowl and add mint, olive oil, salt, and pepper. Mix together and add feta. Toss lightly and serve with fresh bread.
