Turkey meatballs I dream of

30 minutes| Serves 4

I love this recipe from the “Smitten Kitchen” cook book. I altered the original cooking method to baking rather then frying for a lighter and quicker result. I’ve also cut out and substituted in a few ingredients to my preference. If your able to not eat the whole batch in 1 sitting, they can be par-cooked and frozen for later use. Reheat frozen meatball directly in the oven or frying pan for an additional 5 minutes or zap in the microwave for 1 minute. Genius!

1 pound of ground turkey
2/3 cup of fresh bread crumbs (1 to 2 slices)
1/4 cup water
1 teaspoon table salt
1 large egg
2 garlic cloves, minced
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon chipotle powder

Preheat oven to 400 degrees. Combine all the ingredients in a bowl and mix with you hands or a fork until evenly distributed. Form golfball sized meatballs and arrange on a bakers paper lined oven tray. Cook for 10 minutes and then rotate. Cook for another 5 if par-baking, 10 if cooking completely.
