Is it a healthy cookie? Is it an energy bar? Why define it, it’s guilt free and delicious! I’m whipping up this most recent batch for friend who just had a baby.
1 cup unsweetened dried mango
1 cup raw cashews
1/2 cup unsweetened coconut flakes
Submerge mango in a bowl with warm water for about 10 minutes to make fine chopping possible. Drain and discard water. Add all ingredients to a food processor and chop until you get a smooth paste. Form small round balls and store or serve. Can be kept in the refrigerator for 2 weeks or frozen.
