Strawbery goat cheese crostini

30 minutes| Serves 6

I love to serve crostini as an appetizer while entertaining. You can be creatative with the combinations you choose, they present beautifully, and most of the preprations can be done in advance (stay tuned for more examples to come!).

1 baguette sliced thinly
4 tablespoons olive oil
Salt and pepper
1/4 cup goat cheese
1/2 pint of quartered strawberries
2 tablespoons store bought balsamic glaze or homemade balsamic vinaigrette
1 chopped sprig of fresh mint

Preheat oven to 300. Arrange sliced bread on baking sheet and drizzle with olive oil, and salt and pepper. Turn bread over and repeat. Bake in oven for 15 minutes on each side, checking that they become golden brown. In the meantime, slice the strawberries and place aside. Begin assembling crostini when you are ready. Spread goat cheese on bread and put on platter. Top each with a slice of strawberry, drizzled balsamic reduction, and mint. Serve
