Spinach, cashew and roasted red pepper quinoa

15 minutes – Serves 4

I make this nutrient rich sauce and add it to a host of grains. My son Ollie loves it over pasta as well.

1 medium sweet onion, diced
2 garlic cloves
3 tablespoons olive oil
2 cup of quinoa
1/2 cup of raw cashews
1 8 oz jar of roasted red peppers, drained
1 cup of fresh spinach
1/4 cup of parmesan cheese
Salt and pepper


On medium heat, saute the onion and garlic in olive oil for 10 minutes until translucent. Stir frequently to prevent burning. In the meantime, Bring 4 cups of water to boil. Add quinoa, cover, and reduce to simmer for 10 minutes until water is absorbed and grain is cooked. Once onions and garlic are translucent, add mixture to food processor. Also add cashews, red peppers, and spinach. Blend until smooth. Add sauce to cooked quinoa. Combine with parmesan, salt, and pepper at the end and serve.
