Roasted tomato pasta

30 minutes | Serves 4

This is currently mine and my husbands favorite pasta recipe. It’s simple, delicious, and easy to prepare. I started out cooking this today thinking I would try the sauce with an alternate grain. I couldn’t bring myself to do it in the end, why mess with something perfect:)

Ingredients
3 cloves of chopped garlic
2 pints of cherry or grape tomatoes, halved lengthwise
1/3 cup olive oil
1 box spaghetti
1 cup of reserved pasta water
1/3 cup percorino cheese
1 tablespoon red pepper flacks
1/4 cup of fresh basil
salt and pepper

Instructions
Place a large pot of salted water on high heat to boil. In a large sautéing pan, cook tomtoes and garlic in olive oil for 20 minutes over medium heat, stirring occasionally. Tomatoes will begin to caramelize. When water boils, begin cooking pasta for pre-specified time on box. Reserve 1 cup of pasta water when pasta in almost cooked. Strain pasta and add it to frying pan with tomatoes. Add percorino, red pepper flakes, basil, salt, pepper, and about 1/2 cup of reserved pasta water. Mix and taste. If more sauce is desired, add the remaining pasta water and mix again. Serve.
