Roasted red pepper and bacon lavash

30 minutes | Serves 4

My friend made pizza the other night with essentially the same ingredients (except she also included corn, which was great). These toppings are an absolute home run.

4 lavash wraps
1 yellow onion, diced
4 tablespoons olive oil
1 red pepper, diced
4 strips of bacon
1/4 cup pecorino cheese
1/4 cup fontina cheese
4 fresh basil leaves, chopped

Place lavash wraps on 2 baking sheets. Preheat oven to 350. On medium heat, sautee onion in 2 tablespoons of olive oil for 10 minutes until translucent. Stir frequently to prevent burning. Set aside when done. At the same time, fry bacon for 10 minutes on medium heat. Remove bacon and place on paper towel to absorb excess grease. Sautee red pepper in 2 tablespoons of olive oil on medium heat for 10 minutes. It’s desirable that they brown on the edges. Set aside. Shred fontina cheese over each piece of lavash. Add onions, bacon, and red peppers to each. Top with shaved pecorino cheese and basil . Bake for 10 minutes and serve.
