I love the taste and versatility of roasted peppers. I roast these in my toaster oven with the intention of serving them as a side or adding them to eggs, pasta dishes, and flat breads. Usually about half make the transfer from the roasting pan while the other half end up being eaten on the spot. There natural sweetness is irresistible. Cooking then in the toaster oven makes them ultra convenient because you can set the timer and forget about them completely.
3 sliced peppers (red, orange and yellow)
2 tablespoons of olive oil
1/2 tablespoon of salt
1/4 tablespoon of pepper
Slice peppers and place them on roasting pan. Drizzle with olive oil, salt, and pepper and cook at 450 for 30 minutes (I like them the get that caramelized effect. Once that’s achieved, I know they are done). These can be used in a plethora or dishes.
