Cauliflower, oh how I love thee! So many ways to prepare you, but this is one of the simplest and best.
1 head of cauliflower, cut into florets
1 sliced medium yellow onion
4 garlic cloves, diced
2 tablespoons of pine nuts
3 tablespoons of olive oil
3 tablespoons of grated parmesan cheese
Preheat oven to 425. Combine cauliflower, onions, garlic, pine nuts, olive oil, salt, and pepper and mix together. Roast cauliflower in oven for 40 minutes until they are tender and browned. Remove from oven and add parmesan. Mix and serve.
