I’m not sure where I got the inspiration to make proscuitto wrapped pears anymore. I’m pretty sure my much more inventive girlfriend discovered them. I’ve made some version of this dish so many times over that I don’t know how to give credit for them. Like this offshoot, I think you could use almost any fruit, cheese and leafy green combination and wrap it in prosciutto with much sucess. Arugula, apple, and gouda are calling to me for next time.
1 pear, thinly sliced.
1 package of procuitto
1 cup of spinach leaves, stems removed
1 tablespoon olive oil
1/2 tablspoon balsamic vinegar
In a medium bool, whisk oil and vinegar together and and mix in spinach leaves. Set aside. Take pear and place it at the top of the sliced prosciutto. Add spinach and gorgonzola and roll the prosciutto around the ingredients to keep everything together. Use a tooth pick to hold together if needed.
