Peach crostini

20 minutes | Serves 6

Peach crostini put those perfectly seasonal summer peaches to excellent use. This is a delicious starter to keep in mind for when your entertaining.

1 baguette, thinly sliced
Olive oil
Salt and pepper
1 large peach, sliced thinly
1/2 cup of crumbled gorgonzola or blue cheese
1 tablespoon of milk or cream
A few mint or basil leaves roughly chopped
Parmesan cheese

Preheat oven to 2O0. Place slices of baguette on baking sheet and drizzle with olive oil. Add salt and pepper and begin to bake in oven 10 minutes. In the meantime, place gorgonzola and milk in a sauce pan and simmer on low until cheese liquifies. Flip the bread and continue to bake for another 10 minutes. When crostini are golden brown, remove them from the oven and begin spreading the gorgonzola sauce on each piece individually, plating them one at a time. When all pieces on plater have gorgonzola spread, add a peach slice to each and sprinkle the entire plate with basil and parmesan cheese. Serve.
