Pea And Pecorino Quinoa

I received some great feedback on this dish tonight! My husband asked me how something this healthy could taste so rich. Our toddler learned to say the word quinoa and kept repeating it when asking for more. Here you have it, a delicious and healthy dish the whole family will love.

1 cup dried quinoa
2 cups water
2 teaspoons vegetable bouillon paste
1/2 cup frozen peas
1/4 grated pecorino cheese
1 medium yellow onion
3 tablespoons olive oil
Salt and pepper

Sautéed onion in olive oil over medium/low heat. Stir often and continue to cook for about 10 minutes until translucent but not browned. Add salt and pepper. Meanwhile, add bouillon to water and bring to boil. Stir in quinoa. Simmer and cover partially. Cook for 15 minutes until water is almost all absorbed. Add frozen peas and cook uncovered another 3 minutes. Remover from heat and stir in onion and fresh pecorino cheese. Add more salt and pepper as desired. Plate and serve as a side dish.
