This dish is a staple in most Italian families. It’s light on the stomach and warms your bones. I make some version of this pasta for Ollie regularly since it’s so easy and tasty. It’s a favorite of both of ours.
2 cups beef stock
1/2 cup of uncooked small pasta (stelline or acine di pepe)
Salt and pepper
Optional: 1/2 cup broccoli florets
Optional: 1 beaten egg
Bring stock to boil and cook pasta in broth for pre-specified time. Add parmesan cheese, salt, and pepper before serving. Optional: Add diced broccoli directly to broth when 5 minutes remain. Optional: Add 1 beaten egg directly to broth when 5 minutes remain.
