Lentil soup

30 minutes | Serves 4

Lentil are some of my favorite legumes because they taste great and don’t take long to cook. I usually double this recipe and freeze some. It requires minimal extra effort but having a frozen meal is so handy when life gets busy.

Ingredients
2 tablespoons olive oil
1 onion chopped
2 carrots chopped
2 celery chopped
1/4 tablespoon cumin
1/4 tablespoon coriander
2 cup dried lentils
8 cups broth
1 6 oz can tomato paste
1 ripe avocado sliced

Instructions
In large pot, saute chopped vegetables in olive oil for 5-10 minutes. Add salt, pepper, cumin, and coriander and sauté another minute. Add lentils, broth, and tomato paste and cook covered on medium heat for 30 minutes, stirring occasionally. Once lentil are cooked, decide if you have enough liquid and flavor for you liking. You can always add more water or broth. Top with sliced avocado and serve.
