Lemon granita

4 hours | Serves 6

In my fathers’ family, it was customary to have granita in the freezer all summer long. Granita is tart and dairy free, both light and refreshing on a hot summer day. It can be served in a bowl like ice-cream or combined with vodka as a cocktail. I know what I’m having to drink this afternoon:)

Ingredients
2 cups of water
Juice from 3 lemons (about 1/2 cup of lemon juice)
Zest of 1 lemon
1 cup of sugar (can be more or less depending on the desired sweetness)

Instructions
Place water, lemon juice, lemon zest, and sugar on high heat and bring to boil. Strain and excess pulp or seeds before placing liquid in a dish and placing uncovered in the freezer. Stir granita every 30 minutes with a fork, mashing any larger chunks that form. After four hours, mixture should appear solidified and resemble crushed ice. Can be kept in freezer without mixing until desired use.
