Mixed vegetable pasta

30 minutes | Serves 4

I was craving vegetables so I improvised and came up with this healthy pasta recipe. While the traditional pasta recipes I make are my speciality, this california inspired dish is certainly a keeper.

Ingredients
3 cloves garlic diced
1 cup cheery tomatoes halved
1 red pepper diced
2 zucchini diced
2 cups chopped kale
2 table spoons olive oil
1 cup veggie broth
1 box of pasta (I used brown rice pasta)
Parmesan

Instructions
Heat olive oil in frying pan and roast garlic for about 2 minutes. Add halved tomatoes and red peppers and cook until slightly browned, about 15 minutes. Add zucchini and cook another 10 minutes until soft. Prepare boiling water for pasta, add salt to the water and cook pasta for the specified time on packaging. Add kale and broth to skillet and cook for another 5 minutes. When pasta is done, strain it. Add pasta to skillet and incorporate. Add salt and parmesan to taste.
