This classic combo is served in rustic settings all over northern Italy. Typically made with leftover polenta. I take a short cut and use store bought polenta which is widely found. If you want to do even less work , I suggest baking these.
1 pre-made polenta log
1/4 cup of gorgonzola cheese
Non-stick cooking spray
Cut polenta log into flat pieces. Spray grill pan and grill polenta on one side over medium heat until you get grill marks. Flip over and grill until you reach same effect on second side. Add gorgonzola cheese and keep polenta on heat allowing cheese to fully melt. Serve warm
