The fish monger at Whole Foods inspired this recipe. I was very pleased with how it came together. This recipe is written intended for a gas grill.
1.5 pounds (or about 24 ounces) mahi mahi fish
1 tablespoon olive oil
Juice squeezed from 1/2 lime
Nonstick spray for grill
1 ripe mango, chopped
1 tablespoon of chopped cilantro
Season fish with olive oil, lime, salt, and pepper and let sit at room temp while you prep. Turn on grill to preheat to about 400 degrees. Prepare mango and cilantro chutney by combining in a bowl and mixing together with a dash of salt. Set aside. Once grill is heated, spray with nonstick and cook fish covered for a minute and 1/2, skin side up. Turn fish 45 degrees, cover, and cook for another minute and 1/2. Flip fish skin side down, cover, and cook for the last 5 minutes. Remove from grill, plate, and top with chutney.
