Fried zucchini sticks are an easy and tasty appetizer. While these are super simple to make, I generally serve them for small groups since they have to be prepared last minute.
2 large zucchini- sliced lengthwise into 1/3rds and then again into 1/8ths
1/4 cup of all purpose flour
1/4 cup of olive oil, grapeseed oil, or sunflower oil.
Place flour on a plate. Dredge cut zucchini through flour, shaking of excess. Allow oil to heat up and begin frying zuchini about 3 minutes on each side. Zuchinni will turn golden brown. Remove zucchini from oil with slotted spoon and transfer to a paper towel lined plate. Continue to cook in batches until done. Before serving, salt generously and sprinkle with fresh mint.
