My great friend once made this salad for us and it’s been in our repetoire ever since. It’s simple yet bold.
1/4 cup of frozen peas
3 cups of mixed greens
1/2 cup of thinly sliced fennel bulb
5 leaves of mint, chopped
Salt and pepper
1 teaspoon of red wine vinegar
Juice of 1 lemon
1/4 cup of olive oil
1/4 cup of shaved parmesan cheese
Bring peas to boil and allow to cook for 3 minutes. Turn off heat, cover and allow to sit for another 2 minutes. Drain when done and add to salad bowl. In the meantime, add greens, mint, fennel, salt, and pepper to salad bowl. In a sperate bowl whisk dressing together by combining red wine vinegar, lemon, and olive oil. Add to salad bowl and mix together. Shave parmesean on the top and serve.
