This is a simple Italian dessert recipe (hence the rum) that I like to have in my repertoire. It has a homemade feel, but is not labor intensive.
1 cup of whole milk
1/4 cup of semi-sweet chocolate chips
4 savoiardi/ladyfinger or amaretti cookies (or any dry cookie works)
1 shot of rum of your choosing
1 29 oz can of peaches, drained
3 egg yokes
3 teaspoons of sugar
2 mint leaves
Melt chocolate in the milk over stove top. Put aside. Soak cookies in a dish of rum for a couple of minutes. Drain cookies and place them in each individual serving cup. Add a few peaches to each cup. Combine egg yokes and sugar and cook over double broiler for 5 minutes. Remove from heat and mix chocolate sauce in with the egg mixture. Top off each cup with mixture. Refrigerate for at least an hour. Top with a slice of fruit and mint before serving.
