This dish combines the natural sugars or sweet potatoes with a little heat. The sweet potatoes can be roasted in advance and then the last steps are easily done right before serving.
4 large sweet potatoes, washed
1 cup of milk
1 tablespoons of butter
1/2 teaspoon of chipolte powder
Roast sweet potatoes in toaster oven at 375 for 45 minutes. Once they are roasted, add milk, chipotle, and butter to saucepan and place over medium heat. Allow sauce to come to a boil, meanwhile peeling sweet potatoes. Add sweet potatoes to stove top and mix to incorporate. Use immersion blender to puree and serve.
