Chicken marsala

30 minutes | Serves 4

I love how aromatic and rich the flavor of marsala is. This really is a comforting dish. Pair it with a starchy side such as roasted potatoes, parsnip puree, or polenta.

1 cup of all purpose flour
4 chicken breasts
4 tablespoons olive oil
3 tablespoons of dry marsala wine
1/2 cup of beef broth
1 cup of mushrooms
1 tablespoon of fresh parsley

Place flour in on a flat plate and set aside. Cut chicken breasts in half and tenderize each piece, flattening them out a bit. Have a clean plate handy and begin dredging each piece of chicken in flour and plating. Heat up olive oil in large frying pan and begin browning chicken over high heat, about 5 minutes per side. If needed, do this in batches adding more oil to the pan. When all the chicken has been browned, combine all the pieces in the pan at once and add mushrooms, marsala, and broth. Allow to cook uncovered on medium for another 10 minutes. Toss in parsley and mix. Serve.
