I’m not much of a baker but this simple cheese cake recipe isn’t intimidating and always satisfies. I used to always request this exact recipe on my birthdays growing up. Now I make it for my guys on their birthdays.
2 8 oz containers of cream cheese, left at room temperature
1 cup of sugar
1 teaspoon of almond extract
1 16 oz container of sour cream
1 teaspoon of vanilla extract
Preheat oven to 325. Allow cream cheese to sit a room temperature for 15 minutes prior to beginning. In a large mixing bowl, combine cream cheese, 2/3 cup of sugar, and almond extract. Add one egg at a time and begin to beat together. After all eggs are added, continue to mix for 5 minutes for a creamy finish. Put mixture into a greased 9 inch round cake pan and cook for 50-60 minutes. The top and sides will be golden when sufficiently baked. Allow cake base to cool for 15 minutes. Meanwhile, mix sour cream, remaining 1/3 cup of sugar, and vanilla extract together. Add mixture to top of cake and bake for additional 15 minutes. Refrigerate until serving and add berries of your choosing.
