Cauliflower mash

20 minutes | Serves 4

Cauliflower mash is a delicious, healthy, and easy alternative to mashed potatoes that will be a definite crowd pleaser. My preverbal son Oliver signs more, more, more when eating this dish. Cooking cauliflower in milk eliminates the need for other fats like oil or butter.

Ingredients
1 head of cauliflower separated into 1 inch pieces.
1 cups of whole or 2% milk
1/4 cup of white wine
1 whole sprig of tarragon
Salt and pepper

Instructions
Combine cauliflower florets, milk, wine and tarragon in in pot and cover. Cook over medium heat for 15-20 minutes, stirring occasionally until you can easily stick a fork through the cauliflower. Remove tarragon and use immersion blender to puree. Add salt and pepper to taste.
