This salad is fresh, filled with basic ingredients, and extremely satisfying. When back in the states after getting married in Italy, this dish starting appearing on the menu at several of my friends and families gatherings. Great as a side, and appetizer, or a second course. Serve it with fresh bread to soak up the remaining olive oil.
2 ripe quartered tomatoes
2 basil leaves torn into dime size pieces.
3 tablespoons olive oil
salt and pepper
5 fresh mozzarella medallions
Mix all ingredients in a bowl and serve with fresh bread.
