I always have a can of tuna and a can of cannellini in my pantry reserved for times when cooking is an afterthought. This was a staple for me throughout grad school. While I love a meal made from scratch, there is something to be said for a dish this convenient and delicious. Can be served alone or with other fresh ingredients such as mixed greens, steamed green beans, tomatoes, and/or boiled potatoes.
1 can of high quality canned olive oil packed tuna- drained
1 can of cannellini beans- drained and rinsed
4 tablespoons of olive oil
Combine tuna and cannellini in medium mixing bowl. Add olive oil, salt, and pepper and mix together.
