Asparagus soup

25 minutes | Serves 4

Asparagus soup for those who love the taste of asparagus. This simple soup is great served along with a salad for lunch. It’s one of those dishes that makes you feel clean when you eat it.

Ingredients
1 onion chopped
Salt and pepper
2 tablespoons of olive oil
1 potato, peeled and diced
1 bundle of asparagus diced
4 cups of broth
Parmesan cheese
Serve with croutons or fresh bread

Instructions
In a large pot, saute onion with salt and pepper in olive oil for 5 minutes. Add asparagus and potato and let cook for another 10 minutes, stirring occasionally. Add broth and let cook for 10 minutes. Puree with immersion blender and add parmesan cheese and bread of choice.
