Asparagus and fried egg sandwich

20 minutes | Serves 4

We deicded to make brunch at home for mother’s day and came up with this twist on the usual egg sandwich. Definitely going to make this a regular weekend thing.

1 bunch of asparagus
3 tablespoons of olive oil
Salt and pepper
Bread of your choosing, we used fresh ciabatta.
1 cheddar cheese slice per person
1 egg per person

Dress asparagus with 2 tablespoons of olive oil, salt, and pepper and roast at 450 for 15 minutes. Meanwhile, drizzle olive oil on inside of bread and begin toasting the inside using a panini press. After 5 minutes, turn bread over. Add cheese and compose bottom and top slice of bread together. Cook for another 5 minutes. Begin frying eggs in remaining olive oil, salt, and pepper. Allow to cook over low heat about 3 minutes and then flip. Cook for another minute and remove from heat. Combine sandwich by adding fried egg and cooked asparagus. Serve.
