Leave it to the Italians to create a dish so simple yet so delicious. This is a great dish in the spring given asparagus season beginning. It’s an ideal protein packed side served along with a nice big lunch salad.
1 bundle of intact steamed asparagus stalks
4 hard boiled eggs
1/4 cup of olive oil
salt and pepper
Once you’ve steamed your asparagus to your liking, lay it out on a flat plate. In a mixing bowl mash up your eggs with a fork and then add olive oil, salt, and pepper. Pour egg mixtures over asparagus and serve.
