Arugula, pear, and gorgonzola salad with balsamic honey vinaigrette

15 minutes | Serves 4-6

Could this be the salad that never spoils? I never tire of arugula, pear, and gorgonzola as a combination no matter how many times I serve this.

Ingredients
Vinaigrette
1/2 of a large shallot, finely chopped
1/3 tablespoons of olive oil
2 tablespoon of balsamic vinegar
1 tablspoon of honey
1/2 teaspoon of salt
1/4 teaspoon of pepper
Salad
6 oz or 4 cups of arugula
1 pear of your choosing chopped thinly
1/4 cup of pecans (toasted)
3 oz or 6 tablespoons of crumbled gorgonzola or blue cheese

Instructions
Whisk all vinaigrette ingredients together and allow to sit at room temperature until salad is assembled. In large salad bowl, combine arugula, pear, pecans, and cheese. Mix vinaigrette in and serve.
