10 minute tomato basil soup

10 minutes | Serves 4

For a short period after college I cooked at an Italian restaurant in the upper peninsula of Michigan. I obtained this position not on the merit of my experience in the kitchen but because the owner was intrigued by my being a young Italian women. The lasting contribution I had there was that I helped them translate their menu into Italian. What has remained with me is a few scars on my arms and this popular soup recipe.

3 cloves of crushed garlic
2 tabelspoons olive oil
1 can crushed tomatoes
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup of whipping cream
6 leaves of basil

Sautee garlic in olive oil for about 2 minutes until golden brown. Add crushed tomatoes, salt, and pepper and simmer for 5 minutes. Add cream and basil and allow to simmer for another 3 minutes or until ready to serve.
